PROGRAM

13 June 2017
The IKAWA PRO sample roaster campus is a full comprehensive workshop that introduce the participants in the coffee roasting topic.
Subjects: coffee roasting process definition, how to transfer heat to coffee, definition of the coffee roasting profi- le, IKAWA PRO technical introduction, how to design the roasting profile for cupping, filter and espresso.

14 June - visit to WOC exhibition
Subjects: coffee sensory analysis, how to describe the sensory characteristics of a coffee, SCAA cupping protocol. IKAWA PRO practical sessions: how to roast the same coffee with different coffee roasting profiles chan- ging the temperature curve and the airflow one. The coffee roasting chemistry, how the coffee bean change during roasting.

15 June - visit to WOC exhibition
Sensory workshop: cupping evaluation of the roasted coffees. CDS coffee roasting tests.

During IKAWA PRO sample roaster camp you can achieve the SCA Coffee Roasting certifications.
